This Gluten-Free Dairy-Free Banana Bread Will Blow Your Mind
Ingredients
4 ripe bananas
2 eggs
Coconut Sugar (1/2 cup to 1 cup depending on sweetness preference)
1 + 1/4 cup Cup 4 Cup Wholesome Gluten-Free Flour
1 tsp baking soda
1 tsp baking powder
1 cup dark chocolate morsels (Enjoy Life Foods, dairy free)
Coconut Oil (melted) - 1/4 cup (for traditional, dry bread) to 1/2 cup (for moist, dense bread)
1/4 cup Coconut Milk (unsweetened, preferably canned)
Instructions
Preheat oven to 350 degrees
Mash bananas
Add eggs and mix
Mix in wet ingredients
Add dry ingredients and mix
Fold in chocolate chips at the end (save some to top the bread with)
Wipe some coconut oil in a bread pan to prevent sticking
Add mixture to bread pan and top with some chocolate chips
Bake for 55 minutes at 350 degrees
Let bread rest for at least 15 minutes before slicing
